Delicious and Easy Rabbit Taco Recipe

Rabbit meat might not be the first thing that comes to mind for tacos, but it should be. Its mild flavor pairs beautifully with the seasonings in this slow cooker recipe, creating a juicy and tender filling that’s packed with flavor. The slow cooker does all the heavy lifting while you are at work all day, allowing you to quickly assemble the taquitos when you get home so you can feed your hungry family.

Here’s how to make these tasty rabbit tacos:

Ingredients:

  • 1 tasty rabbit
  • Taco seasoning packet
  • Ranch seasoning packet (or 3 tbsp of ranch seasoning mix)
  • Chicken broth
  • Corn tortillas (small)
  • Fresh onions
  • Garlic
  • Jalapenos
  • Oil
  • Salt & pepper to taste
  • Shredded mozzarella cheese
  • Sour cream
  • Queso fresco cheese
  • Cilantro
  • Sazon Goya seasoning

How to cook RABBIT on the GRILL Perfectly!

She uses the packet of ranch seasoning because it was something she saw on Pinterest and she makes her pulled chicken tacos that way. It adds another layer of flavor. She buys the big container of the ranch seasoning mix and uses 3tbsp of it which is equal to the single packet.

Preparation:

  1. On a cutting board, cut the rabbit into 9 pieces with game shears.
  2. Cut the saddle (center portion) into 3 pieces.
  3. Cut the front portion (front legs) in half through the backbone.
  4. Heat the oil in a large skillet.
  5. Transfer the rabbit and onions to a slow cooker, then add chicken broth and Sazon Goya seasoning and stir everything together.

Cooking Instructions:

  1. Mix taco and ranch packets into chicken broth in your crockpot.
  2. Add rabbit and cook on low for 8 hours or high for 6 hours.
  3. Remove the rabbit pieces from the slow cooker and transfer to a large platter or cutting board.
  4. Let the meat cool for about 10 minutes until safe to handle, then shred the meat using 2 forks.
  5. About 10 minutes before eating shred the meat and return into the crockpot to retain more of the flavor and juices. Putting it back in the juice was a huge help to get it all moist.

Optional additions:

  • Cut fresh onions, garlic and jalapenos, caramelize and set aside.

Assembling the Tacos:

  1. Heat a non-stick frying pan over medium heat.
  2. Cook tortillas for about 15-30 seconds on each side until soft and pliable.
  3. Spoon about 2 Tablespoons of the rabbit meat mixture and 2 Tablespoons of shredded mozzarella cheese into a line at one end of each tortilla and tightly roll it up.
  4. Use a toothpick to secure it. Then spray the tops of the tacos with cooking spray or brush them lightly with oil.
  5. Top taquitos with sour cream mixture, queso fresco cheese, and cilantro.
  6. Put oil in pan and fry the small corn tortillas.
  7. Put rabbit and a mix of veggies and salt & pepper to taste.

Some people noticed, like chicken, that the loin was a little dry. When done right, it was very very delicious. It was my wife's first time eating rabbit and she enjoyed it a lot.

This is a great recipe. First time cooking rabbit and we used it. Simple yet very tasty. I love these on the more 'plain' side and can hardly stop eating them!

I love using the ranch powder for our roasts! This sounds good. When I have done taco meat I have never used ranch dressing mix. I use ranch on my taco salad, but never thought to mix the flavor into the meat while cooking.
